I make hummus at least once a week, as it’s a favorite healthy snack in our house. I usually use chickpeas, but decided to play around with black beans, and came up with this spicy hummus. It was so good, there was barely enough left to transfer to a bowl. I hope you like it. If you have any favorite healthy snacks or hummus recipes, please share!
Sandy’s Spicy Black Bean Hummus
1 15 oz. can black beans, drained and rinsed
juice of 1 lemon
2 tbls. tahini (I prefer Joyva brand)
2 tbls. olive oil
1 clove garlic, chopped
pinch of salt
1/2 teas. ground chipotle pepper (less if you don’t like spicy)
1 teas. ground cumin
1/4 teas. paprika (not smoked)
Blend all ingredients in a food processor. Sprinkle with chopped cilantro before serving.
